The Guareschi Fratelli farm continues a long tradition within the agricultural and dairy sectors, dating all the way back to the mid-nineteenth century. The cheese factory, meanwhile, dates back to the 1970s and still retains its original layout today. The milk comes from the cowshed located just over 200 metres away, where white and black spotted cows are reared.
The guided visit around the farm starts with the breeding of the dairy cows and will explain the special dietary regime required to make Parmigiano Reggiano DOP, as well as the differences it has with other rearing practices. The tour will then look at the breeding cycle of cows, from calving through to adult life. You will then visit the on-site production facilities in the cheese factory, where the cheese’s phases and production processes will be explained, all the way through to the aging process. The tour will finish at the premises of the old barn, which dates back to 1750, with a tasting of Parmigiano Reggiano DOP cheeses of three different ages, along with local wine.

Mario Guareschi represents the fifth generation of a family of Parmigiano Reggiano producers. After his father died, Mario took over the family farm. Since 2013, he has worked on activities relating to the countryside every day, becoming qualified as a professional farmer and continuing to rear cattle and produce Parmigiano Reggiano DOP.
